Gerauchertes forelle

A couple of times a month, I used to ride my motorcycle up from Erlangen to the Franconian Switzerland region of West Germany for incredible smoked trout at a quiet little fish hatchery next to the Teufelshöhle cave system. A trout, a liter of local beer, an hour sitting there watching the live fish swimming around in their pools, waiting for their turn to get smoked . . . heaven!
